Over the years I have used many recipes for chocolate chip cookies. The Original Toll House recipe, Jacques Torres’ 72 hr chocolate chip cookie, the Brown-Eyed Baker chocolate chip cookie and my Aunt Marian’s recipe, to name a few. All of these were delicious and yet I remain open to new chocolate chip cookie adventures. Enter pan-banging cookies. I tried them last week and this method has earned a spot in my cookie baking routine. This is the version that I used, I may tweak a bit more with the sugar ratio and use more brown to white. Still, if you are looking for crispy edges and chewy center this is the way.
